When the is getting chilly and pumpkin spice abounds, Fall is upon us! It’s that time of year again to sip warm mugs, bust out the scarves, and enjoy making delicious treats with your kiddoes.

Because I have a child that is gluten sensitive, we have to be careful what ingredients we use in our baking. We have also had dairy issues in the past, so most of our recipes are made completely sans dairy. These pumpkin no-bake cookies are no exception.
These cookies are super easy and fun for little hands to make, and everyone enjoys them! They are perfect with a warm cup of apple cider, tea, or almond milk. (Omm nom nom…) So gather your ingredients, holler for your kiddoes, and try not to devour them all in one sitting!
Yields: 1 1/2 dozen
*We usually quadruple this recipe. You’ll thank me later 😉 )
INGREDIENTS
1/2 cup pumpkin purée
1/2 cup coconut oil (can use 1 stick of butter instead)
1/4 cup smooth peanut butter
1/4 cup almond milk
1/4 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
4 cups gluten-free quick oats
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
Pinch of salt
DIRECTIONS
1. Line a cookie sheet with wax or parchment paper and set aside.
2. In a medium saucepan, add the pumpkin purée, coconut oil (or butter), peanut butter, almond milk, and sugars.
3. Bring to a boil under medium heat, while stirring occasionally. Reduce heat to low and allow to simmer for 5 minutes. Remove from heat and allow to cool for 5 minutes. Stir in the vanilla extract.
4. Add the quick oats, pumpkin pie spice, cinnamon and salt to a large mixing bowl. Whisk to combine.
5. Pour the pumpkin mixture into the oats and mix well.
6. Shape into 2-inch cookies and place on the lined cookie sheet. Allow cookie to cool completely and VIOLA!!
